Foodies interested in learning new tips and tricks to prepare a variety of fare are invited to attend a cooking demonstration when Nicolet College Culinary Arts Instructor and Chef Mitch Below presents his Fall Harvest Cooking Demonstration Wednesday, Nov. 16. The free event will start at 5 p.m. in Nicolet’s Culinary Arts Kitchen and Dining Room in the Northwoods Center on the Rhinelander campus. After the demonstration, attendees will have the opportunity to tour the state-of-the-art kitchen. Culinary delights for the evening will include demonstration and instruction on how to prepare autumn greens salad, Parker House rolls with compound butter, canapé of smoked trout paté, wild rice cracker, and chive. Below started teaching in Nicolet’s Culinary Arts Program this summer, bringing with him years of professional chef experience that he is now sharing with Nicolet students. He has held executive chef and other culinary leadership positions for several restaurants including Canoe Bay in Chetek, Wild Rice Restaurant in Bayfield, and the Edgewater Hotel and Forequarter Restaurant, both in Madison. His resume also includes experience at Relais & Chateaux properties in New Zealand as well as an executive chef position in Alaska. Below attended The Art Institutes International Minnesota, earning an associate’s of science in Culinary Arts. This event is part of Nicolet’s Local Chef Spotlight Series, which will feature Chef Luke Olejniczak on Jan. 18. Olejniczak, a private chef working in the Eagle River area, will prepare a smoked duck dish. For additional details, call (715) 365-4915.
